So we'll be spending the next couple days doing some fun stuff and getting ready for the first day of school. Nothing spectacular. I imagine it'll just be things like swimming, going to the movies, maybe eating some ice cream. Fun summer stuff. And it won't stop once they start school, it'll just be limited.
I've also got a few other projects around the house that I'm working on including reorganizing my scrap room (again) and my daughter's room. We got her a new dresser (thanks to my friend Carol!) and so I took her dresser and put it in my scrap room. And everything is a mess right now. And I mean everything!
To to make a long story long, I probably won't be doing a ton of blogging this week. Oh, who am I kidding, I'll probably be up til 2 am every night!! But, I probably won't have much to post so I thought I'd share this yummy recipe I found yesterday. And being the chocoholic that I am I was sure to try it 5 minutes after finding it! So here it is...enjoy!!
5 minute chocolate mug cake
Here's what you'll need:
4 tablespoons of flour
4 tablespoons of sugar
2 tablespoons of cocoa
1 egg
3 tablespoons of milk
3 tablespoons of oil
3 tablespoons of chocolate chips (optional)
A splash of vanilla extract
A coffee mug
Add dry ingredients to mug and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract and mix again.
Place the mug in the microwave and cook for 3 minutes at 1000 watts.
Don't be alarmed if the cake rises over the top of the mug!
Allow the cake to cool a bit and then turn over onto plate.
Cut in half horizontally, this would make a nice dessert for two.
You could really make this dessert even more fancy by adding fresh berries to the top or a thin layer of icing or whipped cream.
Note: I used regular choc chips and they sank to the bottom in the 2 batches I made. So next time I'm gonna try the mini choc chips.

Yummy recipe! I'm trying to lose weight so that would be perfect for portion control! We don't go back to school until September so I still have time to procrastinate, lol.
Can't wait to see the pics of Ben's first day of Kindergarten! :-) That is if you can take pictures through the tears.:-) They grow up way too fast. I'm not looking forward to that next year!
